Standard is just what it's name says, a standard layout with a side menubar, best for a website of medium to large size.
Simplicity is an elegant layout with a header menubar only, best for a website of small to medium size. The page area below the header is pure content. My website, johnclaydesign.com, uses the Simplicity layout.
Flow is a liquid layout with a side menubar, best for a website of medium to large size. A liquid layout expands to the size of the viewer's screen.
